Starch is a polymer of glucose molecules that is the most common form of storage of carbohydrates in cells.  Starch is also known as glutinous powder in the catering industry. The formula is (C6H10O5)n. The hydrolysis to the disaccharide stage is maltose. The chemical formula is C12H22O11. After complete hydrolysis, the monosaccharide (glucose) is obtained. The chemical formula is C6H12O6. Starch has two types of amylose and amylopectin. The former is a non-branched helical structure; the latter is formed by 24 to 30 glucose residues end-to-end with α-1,4-glycosidic linkages, and α-1,6-glycosidic linkages at the branch. Amylose is blue in iodine, and amylopectin is purple-red in iodine. This is not a chemical reaction between starch and iodine, which creates an interaction. Instead, the central cavity of the starch spiral can contain iodine molecules, and through the van der Waals force, the two form a blue-black complex. Experiments have shown that the iodine molecule alone does not turn the starch blue. In fact, the blue color of the starch is the iodine molecular ion (I3). Starch is a nutrient stored in plants, stored in seeds and tubers, and has high starch content in various plants. Starch can be thought of as a polymer of glucose. In addition to edible, starch is used industrially to produce dextrin, maltose, glucose, alcohol, etc. It is also used to prepare printing paste, sizing of textiles, sizing of paper, pressing of pharmaceutical tablets, and the like. It can be extracted from starch-containing substances such as corn, sweet potato, wild acorn and pueraria.
